Mild Fish Coconut Soup

Prepare some various fish cut into sizable chunks, such as Vietnamese Cobbler [available in most Tesco and other supermarkets] cod loin, smoked haddock and fresh [uncooked] prawns.

Place half a tablespoon of red Thai curry paste into a saucepan and cover with a tin or more, depending on number of guests, of coconut milk. Add a couple of cups of chicken stock, bring to a simmer and set aside. Shallow fry some finely chopped sweet onion, celery, leeks, carrots, fennel and sweet potato, cook only until lightly browned. Add to ‘soup mixture’ of stock and coconut milk then add the fish, bring to a gentle simmer, do not over-cook the fish. Add some cooked noodles and you have a ‘soup main course’.
